The FHTM hosted the Distinguished Hospitality Executive Forum Series on March 3, 2017. Mr Chan Kwok Keung, who is a Michelin-starred chef, as well as the Championship of the world Chinese Culinary Competition and the host chef of HONGKONG TV show, gave a talk to our BFBM students on the characteristics of Huaiyang cuisine. He also demonstrated two famous Huaiyang dishes named “Braised sea cucumber with scallion” and “Braised Shredded Chicken with Ham and Dried Tofu” which is a very famous Huaiyang cuisine presented with exquisite knife skills. One of the exquisite knife skills is cutting a 1mm tofu into 30 strips.
Chef Chan not only introduced the characteristics of Huaiyang Cuisine but also invited two students to cook the dish with him. Students were all interested in the Huaiyang cooking method. Chef Chan also encouraged our students to devote themselves in food and beverage industry and wishing them a bright future for their career. This activity was sponsored by Macau Foundation.
