The fifth lecture of the “Seminars by F & B Leaders” hosted by FHTM was held on April 26, 2019. Chien-Sheng Lee Assistant Professor of I-Shou University, Taiwan was invited to give a talk entitled Chocolate Demonstration for our food and beverage management majors.
Chef Lee first explained the choice of cocoa type, the process of chocolate making and the key points with his rich experience in chocolate art and French pastry making. He also explained how important the temperature affects the chocolate product. Chef Lee not only brought some chocolate with Passion Fruit flavor and chocolate macaron to share with students but also demonstrated the production of chocolate with whiskey flavor on the spot. Many students were very interested in the chocolate-making-process and learnt a lot from chef Lee.
